Unrefrigerated meat always tastes better, or so I guess. The markets of Central on Hong Kong Island, China, sell a variety of meat and produce. The fish is packed on ice. The same cannot be said for the pork. Captured: September 13, 2008. s

  2. mmmmm….I do prefer my meat refrigerated before it’s cooked — but this reminds me of the times I shop real butcher shops, where the meat is so fresh that instead of being red it’s PURPLE. Yowsa. My people like that.

    I agree with Corina. Even though I see this kind of thing almost every day, it never fails to make me glad I’ve been a vegetarian for the past decade.

    It’s easier to cook the meat when it’s already at room temp. Add some good alcohol on the side and there’s nothing to worry about. Fish on the other hand…

  8. Ron: You got that comment in right before I submitted my last one. It is my belief that having a good level of alcohol in your system at all times will kill all nasty bacteria you encounter.

    Shawn: I have raised and processed several animals. This doesn’t particularly bother me. That said, I know several people that get quite upset when they see where their meat comes from, and what’s involved.
